BAKED SPAM

Not very healthy, but cheap and yummy!

One 12 ounce can of spam, sliced into about 8 slices and arranged in a baking dish.

Mix:  1/3 cup brown sugar, 1/2 t. vinegar, 1/2 cup water, and 1/2 t. dry mustard.  Combine well and pour over meat slices.   Bake at 375 for about 30 minutes, basting occasionally.

BEER BRINED PORK CHOPS

2 cups water

2 cups GF beer

3 T salt

3 T packed brown sugar

3 T molasses

1 cup ice cubes

Six 1” pork chops

Olive oil

6 garlic cloves, minced

1 t. pepper

2 t. salt

2 t. dried oregano

For brine:  Combine water, beer, 1/4 cup salt, sugar and molasses in a bowl and stir until sugar and salt dissolve.  Add ice.  Place pork chops in a resealable bag and pour contents of the bowl over chops.  Seal bag and refrigerate for four hours or up to overnight.  Remove chops from brine and pat dry.  Rub chops on both sides with a little olive oil.  In a small bowl, mix garlic, pepper, salt, and oregano.  Rub mixture all over chops.  Put chops under the broiler, turning once, until cooked to preference.

ROMNEY STEAK

1/2 lb bacon

1 lb hamburger

1 medium onion, chopped

Salt and pepper to taste

1 recipe GF cream of mushroom soup

Fry bacon until crisp; remove from pan and drain.  Brown meat and onion in bacon drippings until meat is brown and onion is tender; drain off fat.  Put bacon, soup, salt and pepper back into pan with meat.  Simmer, stirring occasionally, for half hour.  Serve over mashed potatoes.  Makes 4 servings.

BEEF AND RICE

Eye of Round or pork chops

1 small pepper

1 small onion

3-4 cloves garlic

15-oz can Italian style tomato sauce

Trim meat well.  Slice 1/4 inch thick.  Seal meat in oil (1/4 inch deep and very hot).  After all slices are lightly browned, salt and pepper to taste.  Cover with water.  Cook at medium for 10 minutes.  Mince 1/2 of pepper, onion, and garlic directly into meat.  Add tomato sauce and two cans water.  Saute other half in separate pan of oil.  Add to meat also.  Bring meat to a boil; cover and simmer on medium for 2-3 hours, OR cook in crockpot on low.  Pour over rice.

CHILI

1 lb ground beef

2-3 cups kidney beans

2 cloves garlic, minced

1 small onion, minced

1 t. salt

1 T GF flour mix

1-1/2 t. chili powder

8 oz can tomato sauce

16 oz can diced tomatoes

1-2 cups cooked corn (optional)

Brown meat with garlic and onion.  Drain off grease.  Add flour, salt, chili powder, and add to meat; blend.  Add tomatoes and tomato sauce and corn if using.  Stir in kidney beans.  Simmer slowly, covered, for 1 hour, stirring occasionally.  Serves 6.

POOR MAN’S STEAK

2 lb ground beef

1 recipe GF cream of MR soup

1 cup milk

1 t. salt

1 cup GF cracker crumbs

1 T chopped onion

1/4 t. pepper

Mix together and shape into 8-10 patties.  Brown lightly on both sides on a greased griddle.  Place in a casserole dish.  Top with 1 can cream of MR soup diluted with 1/2 can water (stir together until smooth).  Bake at 325, uncovered, for 30 minutes.  Makes 8 servings.

CREAM DRIED BEEF

1/4 pound dried beef

4 T butter

4 T GF flour mix

2-1/2 cups water or milk

6 slices GF toast

Shred slices of dried beef into small pieces.  Melt butter in heavy pan and add dried beef.  Cook until the edges begin to curl and beef is slightly browned.  Sprinkle flour over beef and allow to brown slightly.  Slowly add liquid and cook over low heat, stirring constantly.  Cook until smooth and thickened.  Serve on hot toast.  Makes 6 servings.

BARBECUED HAMBURGER

2 lb hamburger

2 T vinegar

1 onion

2 t. prepared mustard

1/2 cup ketchup

1 t. Worcestershire sauce

2 T brown sugar

1 t. salt

Fry onion and hamburger until it has lost its raw, red color.  Stir until smooth and then add all the other ingredients.  Simmer about 20 minutes.

HAM LOAF

1 lb fresh pork, ground and 1 lb cured ham, ground

OR

2 lb ground regular or turkey ham

1 cup GF bread crumbs

1 egg, slightly beaten

1 t. salt

1/8 t. pepper

3/4-1 cup milk

Mix ingredients and shape into a loaf, and place into a roasting pan.  Bake at 350 for 1-1/2 to 2 hours.  During last 45 minutes, baste occasionally with glaze:

1/4 cup water

1/4 cup brown sugar

1/4 cup Karo

1 T vinegar

1/2 t. dry mustard

Combine, bring to a boil, pour over loaf.
