We made this 2 nights ago for dinner.  It is super easy, super yummy, and a cheap-o GF meal.

Stir together:
1 package hot dogs – sliced
1/4 cup water
1/4 cup tomato sauce
1 16 ounce container Pacific Natural Foods tomato soup (if you don’t have this, just add more tomato sauce and water)
12 ounce bag GF noodles, cooked, drained
Mustard to taste
Salt and pepper to taste
For topping, stir together:
1/2 cup GF bread crumbs
3 T Butter
Put noodle/hot dog mixture in casserole dish.  Spread bread crumbs and melted butter over top.  Bake at 350 for 30 minutes covered, then 10 minutes uncovered.  Kids love this!

Tonight’s dinner (and Friday’s as well) was a Hamburger Cheese Quiche.  Everyone in my family is a huge fan of this quiche, which is why I double the recipe (we go through one in its entirety with each meal).

This is a great meal, because it just requires a vegetable, salad, or fruit to make it a complete meal.  And it is SO easy to whip up.

Mix together:  
1 pound ground beef, browned
1 cup mayonnaise or Miracle Whip (I used Hellman’s – it’s labeled GF; although most mayo is GF, I like to see the label)
4 eggs
2 tablespoons cornstarch
Salt and pepper, adjusted to your taste
1 teaspoon onion powder (you can also saute onion with the meat and eliminate this, but my family is not real fond of onions)
3-4 cups of cheese, depending on how much you like cheese (I combine different kinds – Swiss, Cheddar, Colby, Mozzarella, really whatever you have on hand – I used 3 different kinds this time around)

Stir all together.


Pour into 2 sprayed pans.

Bake at 350 for about 40-45 minutes.  Should be golden brown on the top.  Here’s our finished product.  Just like that, 2 nights of dinner prepared!

1 recipe GF cream of chicken soup (see recipe)

1/2 t. onion powder or garlic powder

1-1/3 cups water

1/4 t. pepper

3/4 cup uncooked long grain rice

1-1/2 lb chicken

1 cup cheddar cheese

Mix soup, water, rice, onion powder, and pepper in a 2-qt shallow baking dish.  Top with chicken.  Sprinkle chicken with additional pepper.  Cover and bake at 375 for 45 minutes or until chicken is no longer pink and rice is done.  Uncover.  Sprinkle cheese over chicken.

NOTE:  Sometimes I double the rice portion and all the other ingredients, except the chicken.  Saves on meat and there’s still plenty!

16-32 oz spaghetti sauce

4 oz drained mushrooms

1 lb ground beef

Salt and pepper to taste

1 lb cottage or ricotta cheese

8 oz mozzarella cheese, shredded

1 T oregano

9 cooked GF lasagna noodles (could experiment with other types of GF noodles)

Saute beef and drain fat.  Stir in sauce, cottage cheese, oregano, mushrooms, salt and pepper.  Layer sauce, noodles, and cheese into 3 layers (starting with thin layer of sauce) in a 9 x 13 pan.  Sprinkle with parmesan cheese.  Cover and bake at 350 for 45 minutes or until bubbly.  May microwave 12-15 minutes at medium high.

4 pounds tomatoes (8 large) or 3 pints canned tomatoes

2 t. basil

1/4 cup parmesan cheese

1/4 t. garlic powder

12 oz. grated mozzarella

1/4 t. pepper

1 t. salt

9 GF lasagne noodles, cooked and drained (could really experiment with any kind of GF noodles – lasagne noodles are a pain!)

Peel, seed, and chop tomatoes.  There should be about 4 cups.  Add seasonings and stir lightly.  Grease a 9 x 13 dish.  Layer noodles, tomato mixture, and cheese three times.  Sprinkle parmesan over all.  Cover.  Bake at 450 for 10-15 minutes, or until heated through.  Do not overcook.  Make cook in microwave, covered with saran wrap, about 10-15 minutes, at power 7, until hot and bubbly.

1 small box cooked GF spaghetti

1 T butter

1/2 cup grated parmesan cheese

2 eggs beaten

Combine above in 8-1/2 x 11 buttered baking dish.  Pat down.  Cover with 15 ounces cottage cheese.  Cover with following sauce:

1 pound browned hamburger

1 jar spaghetti sauce

Sprinkle with additional parmesan cheese.  Bake at 350 for 30-40 minutes. Sprinkle with 2 cups mozzarella cheese and bake an additional 5-10 minutes until cheese is melted.
