FAVORITE PANCAKES/WAFFLES

These are SOOOO good.  You would never know there is no wheat.  They are so much better than regular pancakes made with wheat.

Place in blender and blend at high speed for 3 minutes, the following:

1 cup buttermilk, or yogurt thinned with water to same a buttermilk-type consistency (use a little more for waffles).  You can also try apple juice if dairy is a problem, or any other kind of non-dairy milk.

1 T. olive oil

1 t. vanilla extract (omit with buckwheat)

½ cup uncooked whole or rolled oats (NOT flour)

½ cup whole uncooked buckwheat, brown rice, corn, millet, or other grain (NOT flour)

You may need to add some liquid while doing this to keep a vortex going.

Cover blender and let stand at room temperature overnight.  Preheat griddle on medium high or waffle iron at highest temperature.  Just before baking, add and re-blend for 1-3 more minutes until smooth:

1 egg

Additional liquid (as needed to keep batter churning – it will seem somewhat runny, but it just makes them lighter – they cook up great!)

¼ t. baking soda

½ t. salt

1 t. baking powder (if this sat overnight, the baking powder can be omitted, and increase baking soda to 1 t.)

Bake on hot griddle.
