Preheat oven to 375.  Mix dry ingredients:

3-3/4 cups brown sugar

10 cups GF oats (Bob’s Red Mill sells these – they’re great! – Try finding it on Amazon and paying with gift cards from Swagbucks!)

5 T baking powder

1 t. salt

cinnamon to taste

Mix wet ingredients:

8 eggs beaten

3-3/4 cups milk

Add wet ingredients to dry ingredients.  Then stir in 2-1/3 cups melted butter.  Add apples, raisins, nuts, etc. as desired.  Pour into TWO 9 x 13 pans and bake at 375 for 40-50 minutes.  Top should be browned, edges crispy.  (I usually halve this recipe.)

    I’ve been meaning to try this forever! Baked oatmeal is a favorite on a ton of healthy living blogs, but I don’t have a small enough pan. This post may just have pushed me over the edge to get one!

    Before you go buy a pan, check out the changes I made! It’s good someone commented on the pan size, or I’d have forgotten about that. This is a HUGE recipe. I usually cut it in half, and it still bakes in a 9×13 casserole dish.
