4 pounds tomatoes (8 large) or 3 pints canned tomatoes

2 t. basil

1/4 cup parmesan cheese

1/4 t. garlic powder

12 oz. grated mozzarella

1/4 t. pepper

1 t. salt

9 GF lasagne noodles, cooked and drained (could really experiment with any kind of GF noodles – lasagne noodles are a pain!)

Peel, seed, and chop tomatoes.  There should be about 4 cups.  Add seasonings and stir lightly.  Grease a 9 x 13 dish.  Layer noodles, tomato mixture, and cheese three times.  Sprinkle parmesan over all.  Cover.  Bake at 450 for 10-15 minutes, or until heated through.  Do not overcook.  Make cook in microwave, covered with saran wrap, about 10-15 minutes, at power 7, until hot and bubbly.
