1 recipe GF cream of chicken soup (see recipe)
1/2 t. onion powder or garlic powder
1-1/3 cups water
1/4 t. pepper
3/4 cup uncooked long grain rice
1-1/2 lb chicken
1 cup cheddar cheese
Mix soup, water, rice, onion powder, and pepper in a 2-qt shallow baking dish. Top with chicken. Sprinkle chicken with additional pepper. Cover and bake at 375 for 45 minutes or until chicken is no longer pink and rice is done. Uncover. Sprinkle cheese over chicken.
NOTE: Sometimes I double the rice portion and all the other ingredients, except the chicken. Saves on meat and there’s still plenty!
